lemon-olive oil kale salad (vegan)


Recently, I decided to try and go vegetarian for lunch and maybe even vegan for breakfast. It’s a great way to slim down, and have more appreciation for animals. I had a bad experience on a vacation (read: I killed a chicken accidentally) and suddenly everything was put into perspective.


I’ve been eating this kale salad for a while. I don’t make it too often, but enough that it’s one of my favorites. The kale is tossed in olive oil and fresh lemon juice, and topped with cranberries, pinenuts, and Parmesan cheese (which can be made vegan if needed, I forgot that I wasn’t supposed to eat cheese.).

Kale has many health benefits for body and skin as well, and I LOVE IT.


I recommend buying straight-up kale and not baby kale, because I feel like it doesn’t absorb the flavor of the lemon as much. You can also replace the cheese with some other vegetable or nut, and if you want to you can add a protein like tofu or meat (if you fancy it). It’s a very versatile salad and you can customize it however you like!


lemon-olive oil kale salad

vegan – GF

1 stalk of kale

1/4 cup dried cranberries

a small handful of pinenuts (toasting is optional)

half a lemon

drizzle of olive oil

Wash the kale and pat it dry. Once you dry it, drizzle the olive oil over it and sort of work it into the kale with your hands. Next, squeeze the lemon juice onto it and then toss it. Add the cranberries and toast your pinenuts if desired, then top with grated parmesan or your desired topping.

Enjoy! More lemon juice or olive oil can be added if needed.

no regrets – i will never stop

Morning, lovely people. Today’s post is pretty personal and kind of ranty, but I felt like I needed to share it with all 147 {!} of you. If you don’t know already, I love to write songs and sing.

Once upon a time, last February, I decided to write a song on a trampoline. Yes, a trampoline. I had been debating whether or not to start songwriting, and in the end I thought that I’d give it a go.

So there I was on that trampoline, singing on about leafless trees and asking someone to follow me. Thus, the song Follow Me was born.

I kept writing songs, random thoughts about life and love, loss, all the stuff people sing about. In late May, something happened in my life that spurred me to write a song called No Regrets.

“I have no regrets of saying goodbye, of letting you go, oh,

I have no regrets of waving my hand, of closing the door.”

Little did I know that No Regrets would make its way into other people’s lives. My friends, my family, and others. I kept writing. Soon I had 18 songs to my name, each one telling a different story.

In November I started hitting road blocks. Sometimes the people who you think will support you decide not to. I got really discouraged and almost quit songwriting. It was a friend I had met online that told me to keep doing it.

So I did. I saved up money, bought a guitar, and blocked out anyone who would try to stop me.

January 27, 2016.

That was the day I realized that No Regrets had to happen. I was compelled to share it with the world.

“I want to be a singer.” I said.

“So you want to be Taylor Swift?”

“No, I just want to make my voice be heard and share my stories.”

“It’s just a phase, stop focusing on that. It’s just an outlet, blah blah blah.” They said, trying to stop me.

Apparently, according to some people, I shouldn’t be able to have feelings about my songwriting. Things I’ve written in my songwriting book happened to be read by someone, and they didn’t approve.

I didn’t care! I wasn’t going to stop because of one or two people! I kept writing, narrowing my track list down to about seven songs. Those songs are going to inspire people.

The bottom line is that I was told I wasn’t allowed to dream. Look at me now.

Those songs? They’re real events that happened to me.

My name is MADLI {Nordic origin- she who rises above} and I am going to sing. I will not stop for one person. If you try to tear me down, I will rise up again, bigger and better.

valentines day

Happy Valentines Day, everyone!

I always find Valentines Day an opportunity to simply enjoy the moment. I’ve never had a boyfriend {all the single ladies, all the single ladies} and frankly, I don’t really want or need one. However, I think it’s nice to be kind to everyone on this day and remember that love isn’t just with your SO, it’s with your friends, and you cat if that’s what you prefer.

Also, I look forward to it because of the food.

review | january 2016

Wow, what a month. I celebrated 144 followers on B&B and this blog’s anniversary on the 25th! I can’t believe that January is coming to a close.

As far as the New Year goes, I’ve been sticking to my plan of eating a little healthier {minus the binge at Star Wars today, yikes} and being more active by running in gym class. I’ve also been working a lot on my EP, No Regrets. I’ll have to tell you more about that soon.

Songwriting was a big part in my life this month as was learning to play the guitar, which I got on the 7th! It’s an amazing Fender acoustic and I adore it. I’ll be posting soon about songwriting, which is one of my favourite pastimes and I hope to turn it into something bigger soon.

The cats {Freckles, top, Sassy, bottom} have been wonderful this month. I really love my cats, and they help me through a lot. Freckles will be 3 years old on March 29th! Sassy… well, I’m not sure how old she is, all I know is that she’s adorable.

I’ve been editing my photos with the VSCO app, it has amazing filters and options. I used the filter F5 on all of these.

places to visit – toronto

Hullo guys!

I’ve been having a horrible craving to travel lately. I’m not going anywhere until the summer, so for now I’ll have to share where I’ve been with all of you!

Last summer, I visited Toronto. It’s an absolutely BEAUTIFUL city with lots of shopping, great food, and pretty views. Here are a few places you must go.

Queen Street

OH MY GOSH. This entire complex is amazing and has everything. Urban Outfitters, Anthropologie, restaurants, and more. It’s beautiful.

Speaking of Anthropologie, here’s the one on Queen Street. It’s huge and used to be an old church. Each level is so unique and quirky.


Okay, this place is one of the best restaurants I’ve ever been to. They have authentic Italian food and it is delicious. I highly recommend the Sophia pizza and Nutella fritters. Also make sure to order a plate of olives.

“faking” calligraphy 101

Hey everyone!

There’s been a trend lately to fake calligraphy, and I’ve been doing it myself a lot lately. Someone requested this post in the comments on this post, and I’m also doing it for the benefit of my best friend Liv.

You’ll want to have a pencil and a fine-tipped pen like a Papermate Flair (fine-tipped)  or a Sharpie pen.


Before you start, make sure you have a phrase or a word you want to use. It’s up to you what you use. I used these beautiful lyrics from Taylor Swift’s Out of the Woods. Just write out your phrase in basic script.


Now, like  with a calligraphy pen, take your pencil and make some parts of the letter bigger and bolder than others.

Your result will be the one on the right. Start going over the letters with your pen and filling in the bolder spots.


Here’s your final product! It’s hassle-free and you don’t need any fancy lettering classes or pens. You can choose to leave it like this or decorate it with little flowers, dots, or whatever you please.

Happy New Year! *blows little party horn thing*

I hope you all had a phenomenal 2015, and if you didn’t, may 2016 be a new start for you. This is page one of 366.


Because 2016 is a leap year and not “page 1 of 365”, happy new year to all nonetheless and hope it’s a great one 😊

It’s a leap year.

I really don’t have resolutions because I know I will break them. Therefore, I have goals instead.

There are many things I’d like to achieve this year, and goals I’d like to reach. I’m not going to put my year to waste thinking about the bad things, but pour my everything into being more active, taking part in the community, and trying new things. For example, on the 16th I’m going to chop off most of my hair (!) that’s down to my chest and cut it to my shoulders. It’s a big step but I’m ready to try something new.

I am also going to learn to play the guitar. I know how to play the violin and piano, but guitar has intrigued me for a long time. I’m saving money as we speak, and hopefully by February I will have enough to go out and buy a guitar.

I want to start being more active. I don’t mean just working out, but going outside more and spending more time with my family and friends. I want to focus on the big picture, and tear myself away from the screen for a while, because every moment counts and I’ve been quite sentimental these days.
